If you can’t stand the heat…

…stay out of the kitchen! But you might get hungry, so this really isn’t a very practical saying.

 

This will be Day 10 of the 100+ degree weather the Midwest has been experiencing. The humidity has been creeping back in again in preparation of the rain (!!) tomorrow. Rain, sweet rain. My little vegetable garden sorely needs it! And so does my sanity. Rainy weather usually brings cooler weather. But enough of my rambling about the weather.

 

In my hunt for a tasty but easy drop biscuit recipe this morning, I came across one that looked simple enough and would do for the last-minute breakfast I was creating. It wasn’t a total vegan meal, but vegetarian and relatively healthy. Scrambled egg beaters, lightly fried home-grown yellow gold potatoes, and these biscuits with Blueberry Vanilla Chia Seed Jam (whose recipe I found, again, on Oh She Glows). Since we only keep vegan Earth Balance Spread and plain Silk Soy Milk on hand, the recipe inherently turned vegan out of necessity rather than intention. And boy were they good! They were light, and the small batch was perfect for the family with even a few to spare for snacking.

 

So Easy Drop Biscuits

Vegan, Quick

(Lightly adapted from the Baby Loving Mama blog, by Emilie With)

 

Ingredients

2 cups All-Purpose Flour

1 tablespoon Baking Powder

2 teaspoons White Sugar

1/4 teaspoon Salt

1/2 cup Earth Balance Spread, melted (spread or stick will do! I only had spread.)

1 cup Soy Milk, plain

 

Directions

1. Preheat oven to 450 degrees.

2. Mix together dry ingredients: flour, salt, sugar, and baking powder.

3. Mix melted butter and soy milk into the dry ingredients; stir only until combined.

4. Drop by tablespoons onto lightly greased or parchment paper-lined cookie sheet.

5. Bake for 8-12 minutes, or until edges are lightly golden brown.

 

Recipes makes roughly 12 biscuits.This was good with jam, but I imagine that you could add other ingredients (think herbs, or cheese for non-vegans) that would really elevate these beyond mere breakfast food.
